Kaci's Kitchen: Avocado and cilantro mac & cheese

Tyler, TX — 1 box of dry spiral pasta
2 cloves garlic, minced
2 avocados, peeled and diced
1 tablespoon of fresh lime juice
1/2 cup chopped fresh cilantro
Salt and pepper (to taste)
1/2 tablespoon of cumin
1/4 teaspoon or paprika (to taste)
2 tablespoons butter
1 tablespoon all-purpose flour (I prefer unbleached)
1 cup half and half
2 cups shredded sharp white cheddar cheese
Directions:
1. Bring a pot of salted water to a boil in a large pot. Add in spiral pasta. Stir and cook until Al Dente, about 8-10 minutes. Drain and set aside.
2. While the pasta is cooking, make the avocado sauce by placing the garlic, avocados, lime juice, cilantro, salt, cumin and paprika into a food processor or blender. Process until smooth and creamy. Set aside.
3. To make the cheese sauce, place butter in a small saucepan and heat over medium heat. When butter is melted, whisk in flour to create a thick liquid. Whisk in half and half until smooth. Stir until the sauce starts to thicken. Add in sharp white cheddar cheese and stir until it's melted and sauce is thick and creamy.
4. In a large bowl. Pour the avocado sauce over the pasta and stir until well coated. Add the cheese sauce and stir until pasta is coated. Season with salt and pepper, to taste. Serve warm.
