One Big Happy Table: Cajun Flank Steak & Cream corn

Cajun Flank Steak with Creamed Corn


2 tablespoons unsalted butter

1 small yellow onion, chopped

4 cups fresh corn kernels

1 cup half-and-half

Salt and pepper to taste

1 ½ pounds flank steak, divided into two pieces

2 teaspoons Cajun seasoning

Preheat broiler of oven. Melt butter in a medium saucepan over medium-high heat.

Add onion and cook until softened, about 4-5 minutes.

Add corn, half-and-half, ½ teaspoon salt and ¼ teaspoon pepper. Set aside.

Season steak with Cajun seasoning and additional salt and pepper.

Place on a foil-lined baking sheet, and broil 3-4 minutes per side. Remove from oven and let sit 5 minutes before slicing against the grain.

Serve steak and corn together.
