One Big Happy Table: Teriyaki Salmon

Teriyaki Salmon


¾ pound salmon fillet

2 tablespoons soy sauce

2 tablespoons sugar

¼ cup mirin (rice wine)

1 teaspoon grated fresh ginger

1 teaspoon fresh lime juice

1 teaspoon wasabi (Japanese horseradish)


Heat the broiler element in your oven, and place your oven rack one position lower than the very top.

Line a cookie sheet with aluminum foil and spray with nonstick cooking spray.

Cut the salmon fillet into 1-inch wide strips.

This helps it cook faster.

Place the strips on the cookie sheet, skin side down.

Combine the remaining ingredients in a small bowl, and brush salmon with the sauce.

Broil in the oven for 2 minutes, and brush again.

Repeat every 2 minutes until you have cooked the salmon 10 total minutes. 

Serves 2 but easily doubles or triples.
