Famous chef brings wild game to ETX dining tables

Jackson Bolton is Coyote Sam's new head chef, who has recently found his way back to Tyler after spending two years serving former President Bill Clinton.

"Hillary's coming through the door making coffee," Bolton said. "I've got President Clinton right there standing over me, watching me while I cook for him."
And his expertise did not just come from who he cooked for, but what he has been taught to cook.

"Right out of culinary school I went to work at a restaurant that focused on wild game,"Bolton said.

And now he is bringing wild game to the tables right here in East Texas.

"Nowhere else in Tyler is offering wild game on the menu," Bolton said.

"As the food culture steps up in Tyler, we wanted to step right up there with it," said Daniel Freeman, events coordinator at Coyote Sam's.

Freeman takes great pride in providing East Texans a place to go that gives you 5-star quality in an environment that feels like home.

"Feel welcome, feel at home, and really feel East Texas at every corner," Freeman said.  "It's a real family atmosphere."
