TYLER - Janie Clapp has been baking cakes for as long as she can remember.
Clapp says, "when I was really little, I was always making pies and cooking. In the summer times, I lived and visited my great grandmother and she would teach me about baking."
Thanks to those lessons, janie got a jump start on what is now known as "Janie's Cakes."
A sweet tooth empire, and family affair, by a girl born and raised in tyler.
She started off doing sculpted cakes and wedding cakes 28 years ago.
But seven years ago, she decided to solely focus on pound cakes.
And boy, can she make a pound cake!
Clapp says, "I make the best pound cake in the world. I bake it with lots of love, and I'm real particular about my ingredients."
Ingredients that include, without giving away her recipe, her own farm-fresh eggs, the best cinnamon and good ole butter.
Janie, her daughter and staff make 12 different kinds of pound cakes at their Bakehouse in Tyler.
Clapp says, "We're weighing them up, measuring them out so each has just the right amount of cake batter."
They make hundreds of cakes a day.
Hundreds of thousands a year.
Clapp says, "That's the strive-- for every pound cake to be the perfect pound cake."
Janie's Cakes has received national recognition in magazines like Southern Living and Country Living.
Not to mention, expanding into local restaurants like Julians, and into grocery stores, like Whole Foods and Central Market.
And, it's just the beginning.
Clapp says, "I think when you really love what you do and bake it with heart, it shows."
Especially, at her store on 5th Street.
Customers we spoke with say, they can't get enough.
At Cay Bolin's house, Janie's Cakes are a family tradition.
"My new favorite is their biscotti. I love it. But, I do really just like the plain jane."
Which just so happens to be Janie's favorite, too.
Clapp says, "Hopefully we'll grow from here, and get bigger."
And continue to make new, different flavors, from her table.. to ours.
