TYLER — Leigh Vickery joins Melissa Bennett and Ashley Randall from Sister2Sister Cookies to bake "meringue kisses" for Christmas.
4 egg whites, at room temperature
1 cup sugar
1 teaspoon vanilla
1 ½ cups chopped pecans or milk chocolate chips
Beat egg whites until they hold peaks. Gradually add sugar while continuing to beat. Add vanilla. Fold in pecans or chocolate chips. Line cookie sheets with parchment paper. Drop mixture by spoon onto cookie sheets. Bake at 300° for 20 minutes. Turn oven off and leave kisses in oven until oven cools.
For peppermint meringues, omit vanilla and pecans or chocolate chips. Mix in ½ teaspoon peppermint extract. Drop 12 drops of red food coloring over meringues. Gently fold and drop mixture by spoon onto cookie sheets and follow the instructions as above.
