21 ounces sweet or hot Italian sausage, casings removed
5 cups water
2 (14 ½-ounce) cans stewed tomatoes, with juice
2 teaspoons dried basil
1 (1-ounce) package onion soup mix
2 cups fresh or dried cheese tortellini
3 cups shredded cabbage or baby spinach leaves
Garnish: Freshly grated Parmesan cheese
In a large pot over medium-high heat, sauté sausage for 5 minutes, until browned and crumbly.
Drain grease. Add water, tomatoes, basil and soup mix. Bring just to a boil and reduce heat to low.
Simmer for 15 minutes.
Add tortellini and cabbage or spinach. Simmer for 10 more minutes, or until tortellini is cooked through.
Ladle into 4-5 soup bowls and garnish with Parmesan cheese.
